Bigeye Tuna

(Thunnus obesus)

Bigeye tunas are found in nearly all our world’s oceans and are prized for their excellent flavor and deep red color.  

Caught in more temperate waters and cooler latitudes, they can build fat “toro,” deposited next to the skin that serves as insulation in the colder waters, and is quite delicious. It is commonly understood that wild Bigeye tuna has a better overall taste than its close cousin, the Yellowfin.
